We mixed this and that using THINKY MIXER: Soy Sauce and Olive Oil

“Soy sauce and olive oil” — everyone knows that this combination does not mix well. We mixed these two liquids using THINKY MIXER ARE-310. What difference was there between manual mixing versus mixing using THINKY MIXER?
First of all, we prepared two disposable containers. Then, we gently poured 20 ml of soy sauce and 10 ml of olive oil into each container. One staff member held one container in his hand and stood by while the other container was installed into THINKY MIXER set at 2,000 revolutions for three minutes. Switch on! As soon as the machine was turned on, our staff member began manual mixing with full force. Like mixing salad dressing, he mixed single-mindedly for three minutes.

Two layers are clearly present; water-based soy sauce forms the lower layer and oil-based olive oil, the upper layer. The spherical object near the boundary between the two appears to be an oil particulate created when soy sauce was poured.

Manual mixing (left):
Soy sauce and olive oil are already significantly separated and they are reverting to the original two layers. Around the boundary between the two is a thin middle layer made up of oil particulates measuring a few millimeters in diameter. On the surface are several visible bubbles. Although it can be concluded that the human mixer did a good job, you can see through the slightly cloudy olive oil and the color is generally that of soy sauce.

THINKY MIXER ARE-310 (right):
Although a thin layer of soy sauce is formed at the bottom of the container, soy sauce and olive oil are not clearly separated and are in a suspended form with fine oil particulates forming a thick middle layer. There are no visible bubbles but dozens of large oil particulates are floating on top. Soy sauce and olive oil are mixed and the liquid looks greenish brown.

Manual mixing (left):
Soy sauce and olive oil are more clearly separated. The middle layer is gone and the mixture has essentially turned back into two layers. As olive oil is highly transparent, the color of soy sauce in the lower layer is reflected on the surface of the upper layer.

THINKY MIXER ARE-310 (right):
The separation of soy sauce and olive oil has progressed significantly into two layers but the degree of transparency of olive oil is lower than that in the case of manual mixing.
